4th of July Mini Berry Tarts

Ingredients
  • Filing:
  • 1 (8-oz) packaged cream cheese, softened
  • 2 tsp. lemon zest plus 1 Tbsp. fresh juice (1 lemon)
  • ½ cup granulated sugar
  • 1 cup heavy whipping cream, whipped
  • 1 Tbsp. granulated sugar
  • 2 cups sliced fresh strawberries
  • 1 cup fresh blueberries
  • 12 count package of frozen pastry cups
Instructions
  1. Beat the cream cheese with an electric mixer at medium speed until smooth.
  2. Add the lemon zest, lemon juice, and ½ cup granulated sugar, and beat until well blended.
  3. Gently fold the whipped cream into cream cheese mixture until incorporated.
  4. Place mixture in the refrigerator and cool 4 to 24 hours.
  5. Toss together sliced strawberries with 1 tablespoon granulated sugar and let sit 15 mins or more.
  6. Bake the pastry cups are directed on packaging.
  7. Fill pastry cups to cream cheese filing prior to serving.
  8. Top with sliced strawberries and blueberries and serve.
Notes
Tarts can be fully made in advance and then chilled. The filing, pastry cups, and strawberries can all be prepared in advance and then assembled prior to serving.
